QUI-NO-A (“kinwa”), leeks and fennel

I went shopping on Saturday and came back with loads of healthy food, that is high in fibre, proteins, vitamins etc.:


Tomatoes, salad, fennel tea. cottage cheese, quinoa, leeks, whole grain German bread, kiwis, fennel, yoghurt, sauerkraut, prunes, apples, linseeds, garlic and bran flakes. -I took the expensive ones from Kellog’s because they contain sicnificantly more fibre than the cheap ones from Tesco’s!

I googled “quinoa and leeks” and discovered a nice recipe on eatsmarter.de -it is in german and for two portions -here comes the English version for singles 😉 :

Quinoa with leek and fennel

1. Wash one leek (150g/ 5 oz) and half a fennel bulb (125g/ 4,5 oz) and cut them into cubes. Peel and chop a  garlic clove. 

2.Wash 30g/1 oz of quinoa in a colander until the water is clear.

3. Heat 2 tablespoons of olive oil in a pan and stew the leek, the fennel and the garlic for 4 minutes.

4. Add 200 ml/ 7 fl oz vegetable stock, bring it to a boil and stir in the quinoa.

5. Reduce heat, put a lid on the pan and let it boil for 15 minutes.


It took me 35 minutes to prepare the ingredients and cook this meal. I was surprised by how delicious and filling it actually was! With only 270 kcal per portion. I will definitly cook this more often!
